Cold Steel Commercial Series Scimitar Kitchen Knife

Kitchen butcher's knife designed for meat preparation. The Straight Back blade is made from 4116 Krupp stainless steel, whilst the handle is crafted from durable Zy-Ex material.

4116 Krupp steel, cryogenic hardening

The blade is made from high-quality German 4116 Krupp steel, which has undergone a cryogenic hardening process, resulting in greater hardness (55–57 HRC) and higher impact resistance. This steel, manufactured by ThyssenKrupp, offers excellent cutting properties, is easy to maintain and is highly resistant to corrosion.

Straight Back blade profile

The Straight Back blade is 254 mm long and 2.5 mm thick. The blade is characterised by its durability and ease of resharpening.

Zy-Ex material handle

The ergonomically shaped handle is made from durable Zy-Ex plastic and covered with Kray-Ex material featuring a non-slip surface, which is food-safe.

Kray-Ex feature
Kray-Ex
Kray-Ex is a synthetic polymer with a rubber-like structure used by Cold Steel to manufacture knife handles. It is characterized by high adhesion and anti-slip properties, ensuring a secure grip even in high humidity, low temperatures, and with dirty hands. The material is flexible and absorbs shocks well, which increases comfort of use. Kray-Ex is also resistant to cracking, abrasion, chemicals, and adverse weather conditions, making handles made of this material durable and virtually maintenance-free. Cold Steel uses it in tactical, survival, and utility knives.
4116 Krupp feature
4116 Krupp
4116 Krupp is the trade name for high-quality stainless steel from the German DIN 1.4116 group, produced by ThyssenKrupp. It is used in kitchen knives and medical instruments. The carbon content (0.45-0.55%) ensures good hardness and edge durability, while chromium (14-15%) guarantees high resistance to corrosion and oxidation. The steel also contains molybdenum (up to 0.6%), vanadium (up to 0.2%), manganese (up to 1%), silicon (up to 1%), and a small amount of nickel (up to 1%). It achieves a hardness of 55-57 HRC after appropriate heat treatment, which allows for knives with good cutting properties, easy maintenance, and corrosion resistance.

Great for slicing meat. The blade has just the right width and thickness for this kind of work. The handle is comfortable and doesn't slip out of a wet hand. The steel is easy to sharpen. I definitely recommend it.
