A functional Grand Maitre chef 's knife from Victorinox dedicated to slicing, chopping and portioning. The forged steel blade, with very good cutting properties, transitions smoothly into an ergonomically shaped handle, made of POM synthetic material.     Very good knife. I'm not an expert, but it fits perfectly in my hand. It is well balanced and very sharp. The hardness is around 57 HRC. So far, it maintains its sharpness perfectly, although I have only been using it for a short time. I bought a block for it, but due to the blade length (25 cm), it fits fully in only one compartment. The blade goes through the other holes, so I will have to modify the block to avoid damaging the tip of the knife. I recommend this very sharp knife.
