Kazak M5 Sharpening System
Equipment designed for sharpening knives of various shapes and sizes. It allows for stable clamping of the knife in the clamps and rotating it without removing it, which translates into high precision and a repeatable sharpening angle.
The Kazak M5 model was developed for both users who are just starting with sharpening and more advanced users. Its refined design helps maintain control during use and makes it easier to achieve an even cutting edge without the need to master specialized skills.
Stable steel work base
The base is made of 8 mm thick steel. The material is responsible for the rigidity of the design while moving the sharpening stone along the blade. The surface is coated with a durable powder coating in black, which protects the steel against corrosion and damage resulting from regular use.
Rubber inserts are placed underneath to improve the system's grip on the tabletop and reduce device movement during sharpening. The stable base makes it easier to maintain a repeatable motion and control the pressure of the sharpening stone.
Vertical mast with increased rigidity, guide rod, sliding unit
The vertical mast is made of structural steel with a diameter of 10 mm. The larger cross-section increases system rigidity and reduces deflection during guide rod operation. The mast is coated with a protective finish that protects its surface and facilitates smooth movement of the adjustment components. The guide rod carriage can be moved along the column, adjusting the working height to the width and geometry of the blade.
The guide rod is also made of structural steel with a protective finish, and its length together with the handle is 450 mm. The sliding unit is made of polyacetal plastic. The material stands out for its low coefficient of friction, wear resistance, and dimensional stability.
Solid Krab-type clamps
The knife is mounted using Krab-type clamps. Their design allows both short and long blades to be stabilized. The clamps are made by milling from solid 7075 aircraft-grade aluminum, valued for its high mechanical strength and low weight.
The clamping elements are designed to maintain flexibility while opening and rigidity once the blade is secured. After mounting, the blade remains stationary while the sharpening stone is moved. This solution limits changes to the set angle and makes it easier to achieve a repeatable result along the entire length of the cutting edge.

The sharpening angle is adjusted by changing the carriage position on the vertical mast. This makes it possible to match the setting to the type of knife, blade thickness, and the expected cutting edge profile. With a knife width of 25 mm, the sharpening angle range on one side covers a minimum of 11 deg. and a maximum of 25 deg. The adjustment makes it possible to work with both more delicate kitchen blades and knives that require a more durable working edge.
The system is equipped with a rotating mechanism based on a double-row ball bearing. It allows the knife to be rotated to the other side without removing the blade from the clamps. This solution reduces the risk of changing the knife position between subsequent stages of work. It also makes it easier to maintain sharpening symmetry, because the blade remains mounted in the same position.
Electronic angle gauge and diamond sharpening stones included
The set includes an electronic angle gauge with batteries. The device allows the set sharpening angle to be checked and makes it easier to match the parameters to a specific blade. Thanks to the electronic measurement, the user does not have to rely solely on visual assessment. This matters when sharpening several knives with similar geometry and when reproducing a previously established edge profile.
The set also includes 2 diamond sharpening stones:

- grit 600
The 240 grit sharpening stone is used for more intensive material removal, edge correction, and work on a more dulled blade. 600 grit makes it possible to move on to finer finishing and edge smoothing after the previous stage.
Ergonomics and work control
The system design makes it possible to guide the sharpening stone in a controlled and repeatable manner. Stable blade mounting, an adjustable angle, and smooth guide rod movement limit accidental deviations during sharpening.
The removable frame allows the cutting edge to be checked during work. It makes it possible to observe sharpening progress, verify the evenness of the sharpening stone's contact with the blade, and detect any irregularities more quickly.
The system components are designed to reduce play while maintaining smooth operation. The sliding unit stands out for its increased smoothness of operation and durability estimated at up to 10,000 sharpening cycles.
