Samura Harakiri Nakiri Kitchen Knife

A Nakiri kitchen knife is suitable for chopping and shredding vegetables. It is made from AUS-8 stainless steel. It should not be confused with a traditional cleaver designed for cutting meat. The handle is fitted with plastic scales. This makes the Samura knife ideal for kitchen use.

AUS-8 stainless steel

The Harakiri Nakiri knife is made from high-quality AUS-8 steel. This steel is characterised by a high chromium content and vanadium additives. Chromium improves corrosion resistance, whilst vanadium increases the steel’s resistance to wear. The hardening process takes place within the 58–59 HRC range.

plastic handle

The handle is made of plastic, which, thanks to its special contouring, ensures a secure grip and is also easy to keep clean.

AUS-8 feature
AUS-8
AUS-8 is a Japanese stainless steel, equivalent to 440B steel, characterized by a good balance between corrosion resistance, ease of sharpening, and edge retention. The carbon content (0.7-0.75%) affects the hardness of the steel, while chromium (13-14.5%) provides very good corrosion and abrasion resistance. Vanadium additives (up to 0.26%) improve the homogeneity of the steel's crystal structure and increase the blade's resistance to abrasion. The steel also contains molybdenum (0.1-0.3%), manganese (0.5%), silicon (0.4-1%), and nickel (0.49%). After proper heat treatment, AUS-8 steel achieves a hardness of 58-60 HRC, making it a solid material with good cutting properties and durability. The steel is widely used in mid-range knives, mainly produced in Japan and Taiwan, such as the popular Ontario RAT 1.
