The Old Hickory series was launched in 1924 and currently still features a classic look and solid workmanship. The Paring model is a kitchen knife with a blade that will be perfect for peeling vegetables and fruits.

The clip-point profile head is made of 1075 carbon steel hardened to 50 - 55 HRC, which is characterized by easy sharpening and long sharpness retention. The knife is of full-tang construction, i.e. with the blade shank passing through the entire handle. The sturdy handle consists of walnut wood facings, and the whole is reinforced with brass rivets.

    The cleaver is alright. The writing on the handle looks a bit tacky, and the finish on the grip could be better – it's worth sanding it with sandpaper. The blade looks interesting and chops tenderloin for tartare well.

    A pleasant and stylish kitchen knife. The blade needed some finishing as it was unevenly sharpened, with different angles on both sides (maybe I’m just unlucky with US-made products, or maybe it’s common). It’s good to additionally sand the handle and protect it. Because the steel is susceptible to rust, you should always wipe it thoroughly and you can oil it lightly. If you like this style, I recommend it.

    First impression is very good, the cleaver seems solid. It has initial sharpening, but for more precise work further sharpening is necessary. The handle is a bit rough, in my case one half was very dry – wiping it down with a cloth soaked in lemon oil helped.

    Great knife made of 1095 steel, which in itself says a lot. It sharpens instantly and after a few touches is even suitable for shaving hair. The finish is a bit rough, but the knife has its own unique character. For the price, by Polish standards, the quality is very good. I definitely recommend it.

    I bought two pieces – one made perfectly, the other, although sharp, had some finishing flaws. The handle on the second knife is poorly finished and the mark on the blade is barely visible, but overall I am satisfied. I definitely recommend it.

    Great equipment. The cleaver fits well in the hand and is balanced. It arrives pre-sharpened and can be used straight away, but you can also sharpen it further for slicing. I recommend it!

    I got a great example – even grinds, a nice handle texture and a clear mark. Straight out of the box, the knife is sharp enough for work. As for an Ontario product, the handle has a rough finish – which I consider a plus, as it offers a good grip. But some might find the roughness annoying, and in that case you can smooth it with sandpaper and wipe with linseed oil. It’s clear that the knife has a partial tang, which makes sense for its use, as it saves on materials.

    I have 6 different models from the Old Hickory series and EACH of them had manufacturing flaws. The grinds are uneven and irregular, the wood on the handle cracks near the rivets or has defects, and the markings on the blade and handle are sometimes visible, sometimes not. The people finishing these knives do it very carelessly. The descriptions of these knives should not mention solid quality. I bought them over several years and from various places, so my opinion is honest. I am attaching a photo of the knife.
