I already have a Swedish Mora filleting knife, and now I bought a Cold Steel. The Mora has a noticeably smaller handle than the Cold Steel. On the other hand, the CS blade is a bit thinner, which gives greater flexibility when filleting. The CS handle is made of a very porous material, allowing you to grip the knife securely even with a slippery or greasy hand. The only drawback is that the sheath is a bit too wide – it could be narrower to take up less space in the kitchen cupboard. Despite this small flaw, I think 5* are well deserved.
Cold Steel Commercial Series Fillet Knife 6" Kitchen Knife
A knife designed for precise meat filleting. The blade with a Straight Back profile is made from 4116 Cryo Quenched stainless steel. The ergonomically profiled black handle is made from hard Zy-Ex plastic and coated with Kray-Ex material approved for food contact, with a non-slip texture. The set includes a sheath made from durable plastic that secures the blade during transport and carrying.
4116 Cryo Quenched stainless steel
The blade is made from 4116 Cryo Quenched stainless steel, subjected to cryogenic treatment, which increases its hardness and impact resistance. The steel is characterised by corrosion resistance and ease of sharpening.
Straight Back profile blade
The blade with a Straight Back profile has a length of 152 mm and a thickness of 1.75 mm. The blade is finished using the satin method, which leaves a uniform, linear mark after processing and reduces reflections on the blade surface.
handle with zy-ex and kray-ex
The ergonomically designed handle has a rigid core made of Zy-Ex plastic, which increases durability, and an outer layer made of Kray-Ex material approved for food contact. The soft scales with a non-slip texture improve grip control.
sheath
The set includes a sheath made from durable plastic that secures the blade during transport and carrying of the knife.

Great knife, very useful in the kitchen. Made of good steel. It is a bit more comfortable than the 8-inch model. I use both and I am very satisfied.
