The knife is designed for precise meat filleting. The blade with a Straight Back profile is made of 4116 Cryo Quenched stainless steel. The ergonomically shaped black handle is made of hard Zy-Ex plastic and coated with Kray-Ex material, which is approved for food contact, featuring a non-slip texture.

4116 Cryo Quenched stainless steel

The blade is made of 4116 Cryo Quenched stainless steel, subjected to cryogenic treatment, which increases its hardness and impact resistance. The steel is characterized by corrosion resistance and ease of sharpening.

Straight Back Blade Profile

The Straight Back blade profile has a length of 152 mm and a thickness of 1.75 mm. The blade is finished with the satiny method, which leaves an even, linear trace after treatment and limits reflections on the blade surface.

4116 Cryo Quenched is an improved version of 4116 stainless steel (DIN 1.4116), produced by ThyssenKrupp, subjected to additional cryogenic treatment, which improves its durability and mechanical properties. The carbon content (0.45-0.55%) ensures good hardness, while chromium (14-15%) provides corrosion resistance. The steel also contains molybdenum, vanadium, manganese, silicon, and nickel, which support its strength. The cryogenic process stabilizes the steel, increases wear resistance, and maintains sharpness for longer. After heat treatment, it reaches a hardness of 55-57 HRC, making it easy to maintain and resistant to corrosion. It is widely used in the production of kitchen knives and premium utility tools.

Satin finishing is one of the most popular blade finishes, achieved by grinding the steel with fine-grained abrasives. Parallel micro-scratches remain on the surface, giving the knife a technical, matte appearance. Satin finishing has both aesthetic and practical significance - a smoothed blade is easier to clean, and the slightly reduced friction promotes smoother cutting. Depending on the direction and intensity of polishing, different effects are achieved - from a matte finish to an almost mirror-like finish. The material is lightweight yet very rigid, allowing for the construction of a solid handle without excessively increasing the weight of the knife.     I already own a Swedish Mora filleting knife, and now I've bought a Cold Steel. The Mora has a noticeably smaller handle than the Cold Steel. On the other hand, the CS blade is a bit thinner, which gives it more flexibility when filleting. The CS handle is made of a very porous material, so you can grip the knife securely even with a wet or greasy hand. The only downside is the sheath, which is a bit too wide—it could be slimmer to take up less space in the kitchen cabinet. Despite this minor flaw, I think the 5 stars are fully deserved.
