I own this knife in my collection, it's hard to find any other use for it in the kitchen besides slicing beef. The build quality is fine, but I wouldn't buy it again.

Cold Steel Commercial Series Big Country Skinner Kitchen Knife

The blade is made of 4116 Cryo Quenched stainless steel, subjected to cryogenic treatment, allowing for higher hardness and better impact resistance. Additionally, the steel is corrosion-resistant and easy to sharpen.
Trailing Point Blade
The blade with a Trailing Point profile has a length of 152 mm and a thickness of 2 mm. The wide blade is finished with the satin method, which leaves an even, linear trace after processing and reduces reflections.
Handle made of Zy-Ex and Kray-Ex
The ergonomically shaped handle has a rigid core made of Zy-Ex material, which increases durability, and an outer layer made of Kray-Ex material approved for food contact. The softer scale with a non-slip texture improves grip control.
